๐ฅ Vegan Quinoa & Chickpea Bowl
✅ Ingredients (Serves 1):
- Cooked quinoa — ½ cup
- Cooked chickpeas — ½ cup (rinsed and drained if canned)
- Avocado — ½ piece
- Cherry tomatoes — 5 pieces
- Cucumber — 1 small, chopped
- Fresh spinach or arugula — 1 cup
- Olive oil — 1 teaspoon
- Lemon juice — 1 tablespoon
- Salt & black pepper — to taste
- Optional: pinch of cumin or paprika for extra flavor
๐ฉ๐ณ Preparation:
- Place spinach or arugula at the bottom of a bowl.
- Add quinoa, chickpeas, chopped cucumber, tomatoes, and avocado slices.
- In a small cup, mix olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the bowl and sprinkle cumin or paprika if desired.
