✅ Ingredients (Serves 1):



  • Cooked quinoa — ½ cup
  • Cooked chickpeas — ½ cup (rinsed and drained if canned)
  • Avocado — ½ piece
  • Cherry tomatoes — 5 pieces
  • Cucumber — 1 small, chopped
  • Fresh spinach or arugula — 1 cup
  • Olive oil — 1 teaspoon
  • Lemon juice — 1 tablespoon
  • Salt & black pepper — to taste
  • Optional: pinch of cumin or paprika for extra flavor






👩‍🍳 Preparation:



  1. Place spinach or arugula at the bottom of a bowl.
  2. Add quinoa, chickpeas, chopped cucumber, tomatoes, and avocado slices.
  3. In a small cup, mix olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the bowl and sprinkle cumin or paprika if desired.
