Recipe Portuguese Beef and Corn Rice

 Ingredients:

  • 1 tablespoon olive oil
  • 1 pound beef chuck roast, cut into 1-inch cubes
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 green bell pepper, chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can corn, drained
  • 1 (14.5 ounce) can black beans, drained and rinsed
  • 1 cup beef broth
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked white rice

Method of preparation:

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the beef and cook until browned on all sides.
  2. Add the onion, garlic, and bell pepper to the pot and cook until softened, about 5 minutes.
