Ingredients

2 cups of cooked brown rice 
2 boneless, skinless chicken breasts 1 cup of mixed vegetables (carrots, peas, bell peppers, etc.)
 1 onion, finely chopped 
2 cloves of garlic, minced 
1 tablespoon of olive oil 
1 teaspoon of turmeric powder 
1 teaspoon of cumin powder 
1 teaspoon of coriander powder Salt and pepper to taste 
2 tablespoons of low-sodium soy sauce Fresh coriander leaves for garnish

Method of Preparation: 

Cut the chicken breasts into small pieces. 
Heat the olive oil in a large pan over medium heat.
 Add the onion and garlic to the pan and sauté until they become translucent. 
Add the chicken pieces to the pan and cook until they are no longer pink in the middle.
 Add the mixed vegetables to the pan and cook until they are tender. Add the turmeric, cumin, and coriander powders to the pan and stir well to combine. 
Add the cooked brown rice to the pan and stir well to combine. Add the soy sauce to the pan and stir well to combine. Season with salt and pepper to taste. 
Garnish with fresh coriander leaves before serving.
